POSITION SUMMARY
The Bar Manager leads the bar team and program in alignment with The Pulpo Group values to deliver on excellent service and product consistently. Responsible for creating menus seasonally and in alignment with the concept of the restaurant. Leads the team to perform by ensuring they have the tools to be successful and an environment that is clean and organized with clear expectations and standards. Manages the ordering and inventory to keep costs within the budget. Prioritizes quality of product with the employee and guest experience equally. Creates a welcoming, learning, and fun teamwork environment for the staff, and encourages continuous training and development of all team members.
CORE RESPONSIBILITIES
Leadership
- Lead and demonstrate a culture of (and commitment to) excellence.
- Create an environment that ensures the team feels heard, valued, and accountable to clear expectations.
- Set the tone, feel, and energy of the Bar Program at Sava’s. Create a genuinely hospitable experience and environment for our bar guests.
- Take ownership for each aspect of operation. Explore opportunities to add value.
- Manage all moving parts of the bar with confidence and leadership, and know when to ask for what is needed to ensure success for the team and bar.
Team & Accountability
- Clearly document, implement, and uphold policies and standard operating procedures for high quality products and performance.
- Work with each team member behind the bar to assess strengths and areas for improvement. Understand your team. Learn and implement strategies to lead and inspire them to continue to do great work.
- Regularly evaluate and review performance with staff. Ensure expectations are made clear. Document staff performance that is not meeting standards.
- Coach staff to our standards whenever possible. Make recommendations as appropriate for pay increases, promotions or other incentives.
Systems & Organization
- Develop strong systems and processes to improve and streamline service. Maintain a high level of organization for bar prep, storage, ordering, and inventory.
- Innovative and thoughtful on how to control costs while maintaining the highest standards of quality and service.
- Place and regulate produce/liquor/beer/wine orders and rotation.
- Ensure all opening and closing procedures are handled properly, efficiently, and correctly.
- Monitor and evaluate food, beverage, and service constantly.
Development
- Create cocktail and beer menus seasonally. Procure high end spirits that will drive excitement and revenue. Bring fresh ideas to the management meeting on ways to keep our bar vibrant and our guests raving.
- Constantly be on the hunt for great talent for the bar. Recruit and train for excellence.
- Promote good vendor relationships, and meet with them as needed.
- Maintain professional and technical knowledge by tracking emerging trends in the restaurant industry and participate in professional societies when possible.
Service & Education
- Builds a culture of continuous learning of the Beverage Program. Provides classroom time for new hires and continuous education opportunities for existing staff.
- Established a quarterly curriculum in alignment with the Service Director and other stakeholders. Assist in pre-shift to educate staff about new craft cocktails, wine or beer.
- Build relationships and create repeat guests. Know our guests well.
Financial
- Work with the GM and Wine Director to understand financial reports and the variables under your control. Be able to use this data to make corrective actions to bar operations to achieve sales goals and optimize labor efficiency.
- Work with accounting and purchasing to ensure we are making informed choices and managing bar inventory appropriately. Assist in developing preferred supplier lists – review and take corrective action if necessary.
Requirements:
- 1-2+ years experience managing a Bar operation. Education in hospitality is a plus.
- Ability to memorize multiple drink recipes.
- Must have strong communication skills, verbal and non-verbal.
- Demonstrate ability to multitask and handle a large volume of incoming inquiries, calls, and needs. Work with purpose and a sense of urgency.
